# What You'll Need:

→ Brownie Batter

01 - 1/2 cup unsalted butter
02 - 3/4 cup granulated sugar
03 - 1/4 cup light brown sugar, packed
04 - 2 large eggs
05 - 1 teaspoon pure vanilla extract
06 - 1/2 teaspoon mint extract
07 - 1/2 cup all-purpose flour
08 - 1/2 cup unsweetened cocoa powder
09 - 1/4 teaspoon salt

→ Ganache

10 - 3/4 cup semi-sweet chocolate chips
11 - 1/4 cup heavy cream
12 - 1/4 teaspoon mint extract

→ Garnish

13 - Crushed peppermint candies or chocolate shavings

# Directions:

01 - Preheat oven to 350°F. Grease a 24-cup mini muffin tin or line with mini paper liners.
02 - In a medium saucepan, melt the butter over low heat. Remove from heat and whisk in granulated sugar and brown sugar until smooth.
03 - Add eggs, vanilla extract, and mint extract. Whisk until combined.
04 - Sift in flour, cocoa powder, and salt. Stir until just combined—do not overmix.
05 - Spoon batter evenly into prepared muffin cups, filling each about 3/4 full.
06 - Bake for 16–18 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs. Let cool in the tin for 10 minutes, then transfer to a wire rack to cool completely.
07 - Place chocolate chips in a heatproof bowl. Heat heavy cream in a small saucepan until just simmering, then pour over the chocolate. Let sit for 2 minutes, then add mint extract and stir until smooth and glossy.
08 - Spoon or pipe ganache onto each cooled brownie bite. Garnish with crushed peppermint candies or chocolate shavings if desired.
09 - Allow ganache to set before serving.

# Expert Tips:

01 -
  • The brownie center stays impossibly fudgy while the edges get that perfect crackle
  • Mint and chocolate were meant to be together, and the ganache makes it official
  • These freeze beautifully, so you can always have something sweet ready for unexpected guests
02 -
  • Overbaking is the enemy of fudgy brownies, so pull them out when they still look slightly underdone
  • Room temperature ingredients blend more smoothly and prevent the ganache from seizing
  • The ganache thickens as it cools, so work relatively quickly once it is ready
03 -
  • Chill the ganache briefly in the refrigerator for 10 minutes if it seems too runny for piping
  • Use a small cookie scoop to portion the batter evenly and quickly
