# What You'll Need:

→ Vegetables

01 - 2 medium sweet potatoes, peeled and diced
02 - 1 small red onion, finely chopped
03 - 2 cloves garlic, minced
04 - 2 tablespoons fresh cilantro or parsley, chopped

→ Legumes & Grains

05 - 1 cup cooked brown or green lentils, well-drained
06 - 1/2 cup oat flour or chickpea flour

→ Spices & Seasonings

07 - 1 teaspoon ground cumin
08 - 1/2 teaspoon smoked paprika
09 - 1/2 teaspoon ground coriander
10 - 1/2 teaspoon salt
11 - 1/4 teaspoon black pepper
12 - Pinch of chili flakes

→ Binding & Cooking

13 - 1 large egg
14 - 2-3 tablespoons olive oil

# Directions:

01 - Steam or boil sweet potatoes until fork-tender, approximately 10-12 minutes. Drain thoroughly and mash in a large bowl.
02 - Add cooked lentils, chopped onion, minced garlic, fresh herbs, and all spices to the mashed sweet potatoes. Mix until evenly distributed.
03 - Stir in flour and egg until mixture holds together. Add additional flour by the tablespoon if mixture appears too wet.
04 - Portion mixture into 8 equal pieces and form into uniform patties, approximately 1/2 inch thick.
05 - Heat olive oil in large nonstick skillet over medium heat. Cook patties in batches for 4-5 minutes per side until golden brown and crispy.
06 - Transfer finished patties to paper towel-lined plate to drain excess oil. Serve warm accompanied by side salad, yogurt dip, or chutney.

# Expert Tips:

01 -
  • The crispy exterior gives way to the most incredibly tender, flavorful center that keeps you coming back for seconds
  • These patties freeze beautifully, so you can meal prep a batch and have homemade dinners ready on busy weeknights
02 -
  • Overly wet mixture is the biggest problem, so squeeze excess liquid from your lentils before adding them
  • Let the patties rest in the refrigerator for 15 minutes before cooking if you have time, as this helps them hold together better
03 -
  • Make a double batch and freeze uncooked patties between parchment paper for quick weeknight dinners
  • Grating a carrot into the mixture adds natural sweetness and moisture without changing the flavor profile
