Strawberry Oatmeal Crumble Bars (Printable)

# What You'll Need:

→ Crust & Crumble

01 - 1 1/2 cups all-purpose flour
02 - 1 1/2 cups old-fashioned rolled oats
03 - 3/4 cup light brown sugar, packed
04 - 1/2 teaspoon ground cinnamon
05 - 1/4 teaspoon salt
06 - 3/4 cup unsalted butter, melted

→ Strawberry Filling

07 - 2 cups fresh strawberries, hulled and chopped
08 - 1/3 cup granulated sugar
09 - 2 teaspoons cornstarch
10 - 1 teaspoon fresh lemon juice

# Directions:

01 - Preheat the oven to 350°F. Line an 8-inch square baking pan with parchment paper, leaving an overhang for easy removal.
02 - In a large bowl, combine flour, oats, brown sugar, cinnamon, and salt. Pour in the melted butter and stir until the mixture resembles coarse crumbs.
03 - Reserve 3/4 cup of the mixture for the topping. Press the remaining mixture firmly into the bottom of the prepared pan to form the crust.
04 - In a separate bowl, mix chopped strawberries with granulated sugar, cornstarch, and lemon juice until strawberries are evenly coated.
05 - Spread the strawberry mixture evenly over the crust.
06 - Sprinkle the reserved crumb mixture evenly over the strawberries.
07 - Bake for 35–38 minutes, or until the topping is golden and the strawberries are bubbling.
08 - Allow bars to cool completely in the pan before lifting out and slicing.
