- Line an 8x8-inch baking pan with parchment paper, allowing overhang on sides for easy removal later.
- Combine granola, honey or maple syrup, and melted coconut oil in a medium bowl. Mix until all ingredients are evenly coated.
- Transfer granola mixture to the prepared pan. Press firmly and evenly across the bottom using the back of a spoon or spatula to create a compact base layer.
- In a separate bowl, whisk together Greek yogurt, honey or agave syrup, and vanilla extract until completely smooth and well combined.
- Spread the yogurt mixture evenly over the pressed granola base, using a spatula to create a smooth, uniform layer.
- Distribute mixed berries evenly across the yogurt surface. Sprinkle chia seeds over the top for added texture and nutritional benefits.
- Place the pan in the freezer and chill for at least 4 hours, or until the bars are completely firm and set.
- Remove from freezer and lift the slab out using the parchment paper overhang. Let sit at room temperature for 5-10 minutes to soften slightly before cutting into 12 bars with a sharp knife.
