01 - In a large mixing bowl, combine rolled oats, cocoa powder, ground flaxseed or chia seeds if using, and a pinch of salt. Mix thoroughly to distribute evenly.
02 - Add the peanut butter, honey or maple syrup, and vanilla extract if using. Stir until all ingredients are thoroughly combined and mixture holds together.
03 - Fold in the mini chocolate chips and chopped nuts if using until evenly distributed throughout the mixture.
04 - Using clean hands or a small cookie scoop, roll the mixture into balls about 1 inch in diameter. Apply gentle pressure to ensure they hold their shape.
05 - Place the energy balls on a parchment-lined tray. Refrigerate for at least 30 minutes to firm up before serving.
06 - Store in an airtight container in the refrigerator for up to 1 week, or freeze for up to 3 months for longer storage.
